Celeriac is mainly used grated raw and seasoned. Combined with potatoes, it also makes a good purée. It is sold fresh or canned.
In Europe, it is produced mainly in France, the UK, Italy, the Netherlands and Belgium. Unlike celery stalks, which are very popular in salads, organic celeriac is virtually unknown in the United States.
