Born from cucumbers picked young and candied, cornichons (from the Latin cornus) are now a distinct crop thanks to specially selected varieties. Indispensable in French cuisine, they enhance tartar, charcuterie and other sauces. They are grown in much the same way as cucumbers and melons.
