Celery stalks are eaten fresh, as whole stalks or stalks for soups or stews. For the canning industry, it comes in two forms. Celery garnish", made up of stalk sections, and "celery hearts", i.e. the base of the softer inner leaves.
In Europe, it is produced mainly in Italy, Spain, France, Germany and the Netherlands. In the United States, it is one of the main "salads" consumed.
