Celery root is mainly used grated raw and seasoned. Combined with potatoes, it also makes a good purée. It is sold fresh or canned.
In Europe, it is produced mainly in France, the UK, Italy, the Netherlands and Belgium. Unlike stalked celery, which is highly prized in salads, it is virtually unknown in the United States.
